Restaurant Rescue was contracted in 2006 to bring John & Lisa Bordier’s European Café’ concept to life.  Hired to fine tune the concept and locate the space, our services have included negotiation of the lease, supplier sourcing, interior design and layout with owner contribution, equipment and POS purchasing and menu development and design.

33 Steaks Booze & Jazz
Chico California
33 Steaks Booze & Jazz represents a complete transformation and concept from the restaurant that previously existed in this downtown Chico location.  The look and concept are reminiscent of the 1930’s prohibition era. Restaurant Rescue was hired for lease negotiation of the space, concept and design, kitchen layout and equipment purchasing, menu planning, liqueur license, hiring and training of the entire staff and managing the opening of the restaurant.

Bella’s Sports Pub
Chico, California
Needing a restaurant rescue, our consultant was initially hired to assess the former restaurant, Bella’s, from the point of view of concept viability, management and financial performance.  Significant changes were then made in the form of new financial and operational controls and the addition of a new menu, a full liquor license, complete interior design makeover, and the addition of a bar.

Chico, California
Monks represents a total "restaurant creation" from concept to beyond opening day.  The wine bar design that seats 49 with an outdoor patio, has the look and feel of a casual European bistro.  Initially, consultation and restructuring of the back of the house was made; menu changes were minor, but food costs were reduced to 34% and price points were subsequently lowered to accommodate the local customer base and increase frequency.  Website development and revised pricing structure of the 100 plus wines was implemented boasting ‘BEST Of’ local award two years running, and eventually sold in the fall of 2006.  Monks is still operating strong today.
